1kg zucchini
1/2 cup sugar
3.5 cups vinegar
2 cups sugar
1 teas. curry powder
2 teas. mustard seeds
1/2 teas. diced chilli flakes
Slice zucchini, place in bowl add salt and just enough water to cover. Mix well.
Cover and leave overnight.
Next day drain well by placing a weighted plate over the zucchini.
Combine remaining ingredients in a saucepan, bring to the boil, stirring to dissolve sugar.
Remove from heat, pack zucchini in sterilised jars, pop with a bay leaf and top with spiced vinegar.
